Sounds like you should keep paying him in cash :)

Or at least ask him what he prefers.

How do you know HE took all 5 20's though? Did you see him? Or were all 5 20's just gone?

Though it does sound like he's doing it for income-related reasons (it could also be something like alimony payments) -- I say that only because he wanted $25 less first, then at the next visit he wanted $60 less.

BTW, for similar "you get to choose whether or not to report it to the IRS" reasons, I tend to tip in cash at restaurants, even when I pay by debit card.

Interesting, although not too surprising.

Now it shall be interesting to note if and how, by changing one variable in your relationship (the method of payment), his requests of you change.

Sounds like the note (which I think was very well put) plus giving *him* the option to choose was absolutely the right call. It showed that you value and respect him, his choices, and your relationship with him.

And I'm also glad to hear you plan to continue paying him in cash. :)
